Hot and Sour Soup

  • Cut vegetables. Squeeze excess water from the soaked mushroom and cut into thin slices. Save the soaked water for later use.

  • In a large pot, sauté bamboo shoot, ginger, and mushroom with UNTOASTED sesame oil for about 10 minutes, and add salt. After they are fully cooked, add ★ ingredients (soy sauce, sugar, SAKE, vinegar), plus, saved mushroom soaking water. Cook with medium heat for another 5 to 6 minutes.

  • Mix the arrowroot with water in a small bowl, and add the mixture into the pot,cook until clear and slightly thickened. Add diced tofu, and slowly add slightly beaten egg into hot soup, stirring constantly. Turn off the heat when the egg is half cooked. Add chili oil for your flavor preference and garnish with chopped scallion.
